I am sad your expereince was less than stellar. All of our beef is finished for a minimum of 180 days on a Skagit County grown steam flaked barley & harvested based on weight & finish traits to ensure consistent carcass quality. The dry aging process used on our beef creates a deep flavor that can sometimes be stronger for those used to wet aged beef. We hope you'll give us another try and see what all the hype is about.
