Large: 2-2.5 Pounds
XL: 2.5-3 Pounds
Cooking Tip: Thaw completely and bring to room temp. Heat a 12 inch cast iron in the oven at 325. Pat steak dry. Coat with melted butter, salt and pepper. Wrap bone in tin foil. Bake until 115 flipping halfway. Remove from oven and sear in the same pan on the cooktop on med-high heat while butter basting for 30-45 seconds per side (temp should be 125 now). Remove from heat and let rest. Final temp should be 135 for medium rare.
